Ruby’s homemade strawberry simple syrup

  • Strawberry tops with a little bit of the berry on it
  • equal amounts of sugar
  • Wash your strawberries and cut off the tops. Set the strawberries aside to use in other recipes. Weigh the strawberry tops and place them in a clean jar with a lid. A canning jar works great because it seals tightly. Add the same weight of sugar as the strawberry tops. For example, if the tops weigh 100 grams, add 100 grams of sugar. Put the lid on the jar and shake well to combine. Leave the jar on your counter for 2–3 days. Shake it a few times each day, or whenever you remember. As it sits, the sugar will draw out the juices from the strawberry tops and create a flavorful syrup

its really good for cocktails, lemonade, tea as like a sweetener, and (its really good on vanilla ice cream)
