A vibrant, sweet addition to breakfasts, drinks, and desserts!
Ingredients
– 400g fresh peaches — peeled, pitted, and roughly chopped (about 3 medium peaches)
– 200g water
– 200g granulated sugar
– 15g fresh-squeezed lemon juice — adds brightness and balances the sweetness
Instructions
1. Combine the Base
In a medium saucepan, combine the water and sugar.
2. Add Peaches & Heat
Add the chopped peaches and bring the mixture to a gentle boil over medium heat. Stir occasionally to make sure the sugar dissolves completely.
3. Simmer (15–20 minutes)
Reduce the heat to low and let the mixture gently simmer until the peaches are very soft and have released their juices, turning the syrup a beautiful golden color.
4. Steep & Cool
Remove the pan from the heat and stir in the lemon juice. Let the mixture sit for about 30 minutes. This resting time helps deepen the peach flavor as it cools.
5. Finish Your Syrup
For a traditional clear syrup:
Pour the mixture through a fine-mesh strainer into a clean glass jar. Press lightly on the peaches to extract the liquid, but don’t mash them through. Save the leftover sweetened peaches to spoon over yogurt or oatmeal!
For a thick, nectar-style syrup:
Transfer the entire mixture — peaches and all — into a high-powered blender and blend until completely smooth.
Storage & Serving Ideas
Store the syrup in a sealed glass jar in the refrigerator. It will keep well for up to two weeks.
